I love tacos, tacos of all kinds but one of my favorite ways to make them is pulled pork #StreetTacos! First I rub the roast with a blend of garlic powder, cumin, garlic salt, and a secret blend of spices then I will partially wrap it in parchment paper to help keep it moist. Next is a low and slow smoke for at least 8 but up to 12 hours at 200° there about, I don’t want it to be too hot and cook too fast. After it’s fully cooked and has a wonderful smoke to it I let it cool then using forks pull it apart.

I make two kinds of slaw/relish for them

First I take a ear of corn and grill it, then remove the kernels,add cilantro, red onion, and a splash of lime juice toss it all together and you have a fabulous topping.

I also make a red cabbage slaw with carrots, cilantro, pineapple, a splash of rice wine vinegar and sweet chili sauce toss it together and it’s done

Best Bread & Cheese Ever

Premade loaf cut diagonally and horizontally but don’t cut through the entire loaf 

Add cheese, melted butter with garlic and parsley to the loaf

Cook in oven on 350° for 20 minutes or until cheese has melted

Enjoy with a bowl of chowder

I found this amazing recipe for Honey Garlic Califlower, I  quickly realized that it was completely interchangeable with several other dishes my family would love!


Roast your califlower or other veggies you plan on using

Toss your roasted veggies in the Honey Garlic Sauce

This version has grilled chicken,asparagus, broccoli,califlower and mushrooms served over white rice!

That’s how you can change it up. You start with a basic sauce, adding different ingredients that match the flavor profile for different dinner ideas using similar ingredients throughout the week.

If you b.b.q. too much chicken and it’s not overly seasoned use the leftovers for this type of recipe the following night.

Maybe you made too much vegetables and you don’t want to waste them, toss them in this sauce the next night and now you’ve got a whole new side dish!


Street Dogs


Have you ever been to L.A.’s fashion district? I did several years ago and I remember the family having these amazing smelling dogs that they called “Street Dogs”. I couldn’t eat them because we didn’t know what ingredients they used and I couldn’t take a chance on getting sick.

What did #TheRoxieWay do…….I came home and made my own version of the Best Street Dogs ever! Using a natural hot dog wrapped it in bacon and then I put my indoor griddle to work! In this version we used red, orange and yellow sweet peppers along with onions all grilled together for amazing flavor!

Some great toppings are :

Pico De Gallo, fresh chopped tomatoes, cucumber,pineapple, fresh sweet onions….The list goes on and on basically you want a nice crunch that adds a completely different dimension to the dogs you are used to eating!

Bacon! It’s what’s for dinner!

Now I don’t know about you but I personally love breakfast for dinner, and I also love tacos so why not combine the two and have a party in your mouth!

The weave is easy….Cooking it can be tricky. I suggest using a large frying pan that fits the weaved bacon, then place a heavy heat proof pan on top to keep bacon flat.

Cooking it this way allows for all the bacon to be cooked verses in the oven it cooks a little unevenly.


Biscotti….. it’s easier than you might think

Making #Biscotti is actually a pretty easy #snack to make

Your ingredients…..

Mix it up real good before adding the fruits and nuts.

Shape into loafs and bake until golden brown…..

Slice the cooled #Biscotti and bake a second time until lightly golden brown….

Let the cooked #Biscotti cool before enjoying!

Making #PieCrust #TheRoxieWay with #freshisbest real ingredients

I always thought making pie crust would be too difficult….. But #TheRoxieWay isn’t afraid to try new things so one day I decided why not give it a try…….

First attempt at #homemade pie crust…….surprisingly easy to prepare

Now about that edge…….You achieve this by using a fork. Not bad for the first attempt!

The pie mixture #yummy sugar, cinnamon, vanilla, cornstarch…… I put all my ingredients together just before putting in the oven. When using quality frozen fresh berries you don’t want them to defrost.

And there it is my first attempt at a #Homemade pie…… I can’t believe how incredibly easy it is to make a #FABULOUS pie from just a handful of real ingredients.

The juices are clear and not too runny, just about perfect!  Not too sweet not too tart…..

My next attempt would be pumpkin pie #homemade. I’m really liking this whole crust from scratch. I should probably give other recipes a try but this one is already #FABULOUS why chance it……



Lemon Chicken Piccata

Have you ever had a favorite TV dinner? I did, years ago there was a TV dinner that was so good I could literally eat 2 whole dinners at a time. It was a popular brand that still exists today however it is so laden with chemicals it’s more a foodlike product than real food.

It’s #TheRoxieWay to find a clean way to cook the same thing, I have accomplished that with this amazing recipe I found. I tweeked a few things and added a couple of my own ideas to the recipe to make it my own otherwise it wouldn’t be #TheRoxieWay. My version takes approximately 30 minutes to cook using only Real ingredients, no chemicals and a lot of LOVE.

Lemon Piccata with new potatoes and mushrooms


Who knew soup could be so good? If you like the canned version this will blow your mind it’s so good!!!! Made using fresh ingredients, dry beans, carrots, smoked bacon, and a almost secret blend of spices, cooked to perfection!

Recipe: Bean with Bacon Soup #TheRoxieWay

1lb. dry white beans rinsed and soaked overnight or fast soak method (DO NOT DRAIN WATER) if you need to add liquid I suggest chicken stock

1lb. thick sliced bacon (NOT: Maple but applewood, cherrywood, or hickory) chopped, fried and drained ( VERY IMPORTANT for final flavor… render the fat and set aside for use later. You should get about 1/2 cup give or take of rendered fat use it all)

1/2 Bag frozen but defrosted carrots chopped finely

1/4-1/2 small can tomato paste (Contadina or Muir Glen I find to have the best flavor)

SPICES: Ancho pepper, garlic powder, onion powder, 1 bay leaf, white pepper and salt (with the spices start off with small amounts like a teaspoon each increasing only the flavors you want to bring forth…example don’t over salt, the bacon will add salt, and you don’t want it over-salted, but the onion powder will add a back round flavor that is important to the final dish)

Cook beans on medium high when almost done add the rendered bacon fat and spices let cook until beans are fully cooked.

Add tomato paste in small amounts starting with a 1/4 can if you need to adjust add a little more. It gives the nice orange-red color of the soup.

Next the beans are fully cooked, and flavors taste right… add your carrots let them simmer until heated through.

Finally add your cooked bacon let simmer for about 20 minutes and flavors will deepen.

For reheating I suggest adding a little chicken stock or water to thin down a little.






I look forward to fall mostly for the fabulous soups, stews, and baking that takes place @TheRoxieWay’s  house. Here is my Chowder I’ve been making for over 15 years improving upon until finally it couldn’t possibly get any better. Using fresh ingredients and a lot of love this is the best #ClamChowder in the West Coast made TheRoxieWay. So good it will turn a doubter into a believer………
